- 8 oz Baby Bella Mushrooms (roughly chopped)
- 3 oz Turkey turkey turkey pepperoni (diced)
- 3 oz Sun-Dried Tomatoes in Oil
- 6 oz Shredded Mozzarella
- 6 Tortillas (6-inch Mission Carb Balance)
Instructions
- In a nonstick skillet over medium-high heat, cook the diced turkey pepperoni and chopped mushrooms until the mushrooms are golden and tender (about 6-8 minutes). Stir occasionally.
- Mix in the sun-dried tomatoes and transfer the filling to a bowl to cool slightly.
- Lower heat to medium-low and place one tortilla in the skillet. Sprinkle half of it with 1/2 oz mozzarella cheese, add approximately 45g of the filling on top, followed by another sprinkle of mozzarella.
- Fold the tortilla over and press gently. Cook until both sides are golden brown.
- Repeat with remaining tortillas and filling. Slice into triangles and serve warm.
