- 8 oz Baby Bella Mushrooms, roughly chopped
- 3 oz Turkey Pepperoni, diced
- 3 oz Sun Dried Tomatoes in Oil
- 6 oz Shredded Mozzarella
- 6 Tortillas (I used 6" Mission Carb Balance)
Instructions
- In a nonstick skillet over medium-high heat, sauté diced turkey pepperoni and chopped mushrooms until the mushrooms are golden and shrink slightly (about 6-8 minutes). Stir in sun-dried tomatoes and transfer to a bowl.
- Lower the heat to medium-low. Place a tortilla in the skillet and layer one half with 1/2 oz of shredded mozzarella and about 3 tablespoons of the filling. Top with another 1/2 oz of mozzarella.
- Fold the tortilla over and press down lightly to help melt the cheese. Cook until both sides are golden brown (about 2-3 minutes per side). Repeat with remaining tortillas.
- Slice each quesadilla into triangles and serve warm with marinara sauce or your choice of dipping sauce.
