Ingredients

Scale
  • 2 cups blanched almond flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 large eggs (separated)
  • 1/4 cup coconut oil (melted)
  • 1 teaspoon apple cider vinegar

Instructions

  1. Preheat your oven to 325°F and prepare an 8×4-inch loaf pan by greasing or lining it with parchment paper.
  2. In a medium bowl, mix together almond flour, baking soda, and salt; set aside.
  3. In a large bowl, whisk melted coconut oil, egg yolks, and apple cider vinegar until combined. Gradually add the dry mixture and stir until just mixed.
  4. In a separate bowl, whip egg whites until stiff peaks form, then gently fold them into the batter.
  5. Pour the batter into the prepared loaf pan and bake for 40-45 minutes until golden brown and a toothpick inserted comes out clean.
  6. Cool on a wire rack for at least 15 minutes before slicing.
