- 1–½ cups fresh apple cider
- 4 tablespoons cold unsalted butter
- 2 large eggs
- 1/3 cup granulated sugar
- ½ cup brown sugar
- 1/3 cup light olive oil
- ¼ cup sour cream
- 1–¾ cups all-purpose flour
- 1–½ teaspoons baking powder
- ½ teaspoon baking soda
- 1–½ teaspoons ground cinnamon
- Pinch allspice
- 1/4 teaspoon coarse kosher salt
- 1 tablespoon butter at cool room temperature
- ¼ cup granulated sugar for topping
- 1 teaspoon ground cinnamon for topping
Instructions
- Preheat your oven to 350°F and prepare a 9” square baking dish by greasing it and lining it with parchment paper.
- In a large sauté pan, boil the apple cider until reduced by half (about 5 minutes). Measure out ¾ cup, then whisk in diced butter until melted.
- In a medium bowl, combine eggs, granulated sugar, brown sugar, olive oil, sour cream, baking powder, baking soda, ground cinnamon, allspice, and salt; mix well.
- Gradually add the boiled cider mixture to the wet ingredients and stir until smooth. Gently fold in flour until just combined.
- Pour batter into the prepared dish and bake for 22–25 minutes or until golden brown.
- Let cool slightly before adding room temperature butter on top; sprinkle with a cinnamon-sugar mixture.
