  • 1/2 tsp vanilla extract
  • Oil (for frying)
  • 3 apples (peeled, cored, and chopped)
  • 3 tbsp coconut sugar
  • 2 tbsp plant-based milk
  • 1/2 tbsp lemon juice
  • 1/2 tsp cornstarch
  • 1 tsp cinnamon

Instructions

  1. Prepare the crepe batter by combining dry ingredients in a bowl and blending wet ingredients until smooth. Mix together until combined and let it rest.
  2. Heat oil in a non-stick skillet over medium heat, pour 1/4 cup batter into the skillet, spread evenly, and cook until golden brown. Flip carefully and repeat.
  3. For the apple filling, combine chopped apples with coconut sugar, plant-based milk, lemon juice, cornstarch, and cinnamon in another skillet. Cook over medium heat until apples are tender.
