  • 1 tablespoon olive oil
  • Dash of garlic powder
  • Dash of salt
  • Dash of pepper
  • 1/2 teaspoon basil
  • 1/2 teaspoon oregano
  • 1 small zucchini
  • 1 medium tomato (diced)
  • 1/2 cup mozzarella cheese

Instructions

  1. Preheat oven to 325°F (165°C).

  3. Heat olive oil in a cast iron skillet over medium heat. Brown chicken slices for 2-3 minutes on each side; transfer to a baking dish.
  4. In the same skillet, sauté sliced zucchini until soft. Add diced tomato, basil, oregano, salt, and pepper; cook for an additional 2-3 minutes.
