  • 24 vines of cherry tomatoes
  • 2 cloves garlic
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Sea salt and black pepper
  • 4 slices crusty sourdough bread
  • 4 tbsp hummus
  • Sunflower seeds (for topping)

Instructions

  1. Preheat the oven to 170°C (340°F).
  2. In a mixing bowl, combine minced garlic, balsamic vinegar, and olive oil.
  3. Place vine tomatoes in an ovenproof dish, drizzle the mixture over them, season with salt and pepper, then roast for 20 minutes.
  4. While tomatoes roast, toast the sourdough until golden.
  5. Spread hummus on each slice of toast.
  6. Top with roasted tomatoes and drizzle any remaining balsamic mixture over them.
  7. Finish with a sprinkle of sunflower seeds before serving.
