  • 1 lb chopped cauliflower
  • 8 slices turkey bacon (chopped)
  • 1 pint grape tomatoes (halved)
  • 2 leeks (sliced)
  • 2 tbsp dill pickle relish
  • 1/2 cup keto mayonnaise
  • 2 tbsp mustard
  • Green onions
  • Pink salt and cracked black pepper

Instructions

  1. Boil the chopped cauliflower in salted water for about 7 minutes until tender. Drain and cool on a baking sheet.
  2. Roast halved grape tomatoes at 375°F for 20-30 minutes after drizzling with olive oil and seasoning.
  3. Cook the chopped turkey bacon in a skillet until crisp; drain excess grease.
  4. Sauté sliced leeks in reserved bacon fat until translucent.
  5. In a bowl, mix dill pickle relish, mayonnaise, mustard, salt, and pepper.
  6. Combine cooled cauliflower, tomatoes, green onions, turkey bacon, and leeks into the sauce mixture; mix well.
