  • 1 lb chopped cauliflower
  • 8 slices chopped turkey bacon
  • 1 pint halved grape tomatoes
  • 2 leeks (sliced)
  • 1/2 cup keto mayonnaise
  • 2 tbsp dill pickle relish
  • 2 tbsp mustard
  • Green onions (for garnish)

Instructions

  1. Boil chopped cauliflower in salted water until tender (about 7 minutes). Drain and cool.
  2. Preheat the oven to 375°F. Roast halved tomatoes drizzled with olive oil for 20-30 minutes.
  3. Cook turkey bacon in a skillet until crispy; set aside.
  4. Sauté sliced leeks in reserved bacon fat until translucent.
  5. In a bowl, mix mayo, relish, mustard, salt, and pepper.
  6. Combine cooled cauliflower with bacon, leeks, tomatoes, and dressing; mix well.
