  • 16 oz extra firm tofu
  • 1/3 cup cornstarch
  • 1/3 cup non-dairy milk
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/2 cup buffalo sauce
  • 23 cups romaine lettuce (chopped)
  • 1/2 cup shredded vegan cheddar
  • 1/2 cup matchstick carrots
  • 1 avocado (sliced)
  • 4 large tortillas
  • 1 cup unsweetened almond milk yogurt (plain)
  • 2 tbsp lemon juice
  • 1 tbsp vinegar
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1 tbsp fresh dill (minced)
  • 1 tbsp fresh parsley (minced)

Instructions

  1. 1. Preheat oven to 400°F (204°C).
  2. 2. Slice the pressed tofu into strips.
  3. 3. Coat each strip in a mixture of cornstarch, garlic powder, and salt then dip in non-dairy milk.
  4. 4. Bake the tofu on a parchment-lined baking sheet for 25 minutes, flipping halfway through.
  5. 5. Toss baked tofu in buffalo sauce and bake for an additional 5 minutes.
  6. 6. Assemble wraps with vegan ranch, lettuce, carrots, avocado, and buffalo tofu in tortillas.
  7. 7. Roll up tightly and grill if desired.
