- 16 oz extra firm tofu
- 1/3 cup cornstarch
- 1/3 cup non-dairy milk
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 1/2 cup buffalo sauce
- 2–3 cups romaine lettuce (chopped)
- 1/2 cup shredded vegan cheddar
- 1/2 cup matchstick carrots
- 1 avocado (sliced)
- 4 large tortillas
- 1 cup unsweetened almond milk yogurt (plain)
- 2 tbsp lemon juice
- 1 tbsp vinegar
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1 tbsp fresh dill (minced)
- 1 tbsp fresh parsley (minced)
Instructions
- 1. Preheat oven to 400°F (204°C).
- 2. Slice the pressed tofu into strips.
- 3. Coat each strip in a mixture of cornstarch, garlic powder, and salt then dip in non-dairy milk.
- 4. Bake the tofu on a parchment-lined baking sheet for 25 minutes, flipping halfway through.
- 5. Toss baked tofu in buffalo sauce and bake for an additional 5 minutes.
- 6. Assemble wraps with vegan ranch, lettuce, carrots, avocado, and buffalo tofu in tortillas.
- 7. Roll up tightly and grill if desired.
