- 1 English cucumber
- 8 ounce package imitation crab meat (chopped)
- 3 green onions (sliced)

Instructions
- Slice the English cucumber very thinly using a mandolin slicer or a sharp knife. Place the slices in a mixing bowl with a lid.
- Add the imitation crab meat, sliced green onions, soy sauce, and spicy mayo. Season with a little kosher salt and pepper to taste. Secure the lid on the bowl and shake gently until all ingredients are well mixed. Taste for seasoning and adjust by adding more soy sauce or spicy mayo as needed.
