  • 1.5 lbs boneless skinless chicken breasts
  • 2 lbs zucchini
  • 1.5 lbs tomatoes
  • 6 oz can low sodium tomato paste
  • 7 cloves garlic
  • 1 tbsp balsamic vinegar
  • 9 oz fresh mozzarella cheese
  • Fresh basil

Instructions

  1. Preheat a large deep skillet over medium heat and add 1 tablespoon of oil.
  2. Cook the chicken cubes seasoned with salt and pepper for about 5 minutes until browned.
  3. Sauté minced garlic in the skillet until fragrant, then add sliced tomatoes, tomato paste, balsamic vinegar, oregano, salt, and half of the basil.
  4. Stir in zucchini cubes and cover; cook for about 12 minutes until tender.
  5. Top with mozzarella slices and let melt on low heat for an additional 5 minutes.
  6. Garnish with remaining basil before serving hot.
