- 1.5 lbs boneless skinless chicken breasts
- 2 lbs zucchini
- 1.5 lbs tomatoes
- 6 oz can low sodium tomato paste
- 7 cloves garlic
- 1 tbsp balsamic vinegar
- 9 oz fresh mozzarella cheese
- Fresh basil
Instructions
- Preheat a large deep skillet over medium heat and add 1 tablespoon of oil.
- Cook the chicken cubes seasoned with salt and pepper for about 5 minutes until browned.
- Sauté minced garlic in the skillet until fragrant, then add sliced tomatoes, tomato paste, balsamic vinegar, oregano, salt, and half of the basil.
- Stir in zucchini cubes and cover; cook for about 12 minutes until tender.
- Top with mozzarella slices and let melt on low heat for an additional 5 minutes.
