- 1.5 lbs boneless skinless chicken breasts (cut into 1" cubes)
- 2 lbs zucchini (cut into 1" cubes)
- 1.5 lbs tomatoes (sliced)
- 9 oz fresh mozzarella cheese (thinly sliced)
- 7 garlic cloves (minced)
- 6 oz can low sodium tomato paste
- 2 tbsp olive oil (divided)
- 1 tbsp balsamic vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh basil (for garnish)
Instructions
- Preheat a large deep skillet over medium heat. Add 1 tablespoon of oil, then the chicken cubes seasoned with salt and pepper. Cook for 5 minutes.
- Push the chicken to one side, add another tablespoon of oil, and sauté garlic for about 30 seconds.
- Mix in sliced tomatoes, tomato paste, balsamic vinegar, oregano, additional salt, and basil. Cook for about 5 minutes.
- Add zucchini, stir well, cover, and cook on low-medium heat for approximately 12 minutes.
- Top with mozzarella slices; cover again and simmer until melted (about 5 minutes).
- Garnish with extra basil before serving.
