  • 1.5 lbs boneless skinless chicken breasts (cut into 1" cubes)
  • 2 lbs zucchini (cut into 1" cubes)
  • 1.5 lbs tomatoes (sliced)
  • 9 oz fresh mozzarella cheese (thinly sliced)
  • 7 garlic cloves (minced)
  • 6 oz can low sodium tomato paste
  • 2 tbsp olive oil (divided)
  • 1 tbsp balsamic vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh basil (for garnish)

Instructions

  1. Preheat a large deep skillet over medium heat. Add 1 tablespoon of oil, then the chicken cubes seasoned with salt and pepper. Cook for 5 minutes.
  2. Push the chicken to one side, add another tablespoon of oil, and sauté garlic for about 30 seconds.
  3. Mix in sliced tomatoes, tomato paste, balsamic vinegar, oregano, additional salt, and basil. Cook for about 5 minutes.
  4. Add zucchini, stir well, cover, and cook on low-medium heat for approximately 12 minutes.
  5. Top with mozzarella slices; cover again and simmer until melted (about 5 minutes).
  6. Garnish with extra basil before serving.
