  • 6 jalapenos (halved and seeds removed)
  • 3 cups fresh cauliflower florets
  • 6 strips thick-cut turkey bacon
  • 1 1/4 cups cheddar cheese
  • 8 oz cream cheese (1/3 less fat)
  • 1/2 cup light sour cream
  • 1/4 cup low-fat milk
  • 1 teaspoon cayenne pepper

Instructions

  1. Preheat your oven to 375°F.
  2. On a baking sheet, combine chicken breasts and jalapenos with olive oil and salt; place turkey bacon on another sheet.
  3. Roast both sheets in the oven for about 20-25 minutes until chicken is cooked and bacon is crispy.
  4. In a large bowl, mix together cheddar cheese, cream cheese, light sour cream, milk, and cayenne until smooth.
  5. Shred the chicken and crumble the bacon once cooked; chop jalapenos.
  6. Combine shredded chicken, crumbled bacon, and chopped jalapenos with the creamy mixture.
  7. Spread cauliflower florets in a baking dish; pour the creamy mixture over them. Top with remaining cheddar cheese, jalapenos, and bacon.
  8. Bake for an additional 20 minutes or until golden brown.
