  • 6 jalapenos (halved, seeds removed)
  • 6 strips thick-cut turkey bacon
  • 3 cups fresh cauliflower florets
  • 1 1/4 cup cheddar cheese
  • 8 oz cream cheese (1/3 less fat)
  • 1/2 cup light sour cream
  • 1/4 cup low-fat milk
  • 1 teaspoon cayenne

Instructions

  1. Preheat your oven to 375°F.
  2. On a baking sheet, place the chicken and halved jalapenos; drizzle with olive oil and season with salt. On another sheet, arrange the turkey bacon. Roast for about 20-25 minutes until cooked through.
  3. In a mixing bowl, blend together cheddar cheese, cream cheese, light sour cream, milk, and cayenne until smooth.
  4. Shred the chicken, crumble the turkey bacon, and chop the roasted jalapenos once cooked.
  5. Combine shredded chicken, three-fourths of the jalapenos, and three-fourths of the bacon into the creamy mixture.
  6. Grease a 9×12 baking dish; layer cauliflower at the bottom followed by the creamy mixture. Top with remaining cheese, jalapenos, and bacon.
  7. Bake for about 20 minutes until golden brown on top.
