- 1 large onion, thinly sliced
- 1 green bell pepper, thinly sliced
- 2 cups milk
- 1 cup shredded provolone cheese
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp butter
- 2 tbsp all-purpose flour
Instructions
- Cook the tortellini in boiling salted water according to package instructions until al dente. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add the beef and season with salt, pepper, and Italian seasoning. Sauté until browned, about 5-7 minutes. Remove and set aside.
- In the same skillet, add onions and bell peppers; cook until softened, about 5 minutes.
- Lower the heat and add butter to the skillet. Once melted, whisk in flour to create a roux. Gradually pour in milk while whisking until smooth. Stir in provolone cheese until melted.
- Return the beef and vegetables to the skillet along with the tortellini; gently fold to coat in sauce and heat through for 2-3 minutes.
