- 1 pound chicken breast (thinly sliced)
- 7 cups broccoli florets
- 1/2 cup + 2 tablespoons chicken broth
- 1/2 cup coconut aminos
- 3 tablespoons lime juice
- 1 tablespoon toasted sesame oil
- 3 cloves garlic (minced)
- 1 inch fresh ginger (minced)
- 1/2 teaspoon red pepper flakes
- 1 tablespoon tapioca flour
- Salt and pepper to taste
- 1 1/2 tablespoons olive oil
Instructions
- In a small bowl, whisk together coconut aminos, broth, lime juice, sesame oil, garlic, ginger, red pepper flakes, and pepper to create the stir fry sauce. In another bowl, mix broth with tapioca flour to form a slurry.
- Heat olive oil in a large skillet over medium heat. Sauté the sliced chicken until cooked through (about 30-60 seconds per side). Remove from the pan.
- Add broccoli to the same skillet and sauté with salt and pepper until tender (about 5-7 minutes). Remove from the pan.
- Lower heat and pour in the stir fry sauce followed by the slurry. Cook until thickened (about 3-5 minutes).
- Return chicken and broccoli to the skillet; combine everything well. Serve hot.
