  • 6 (4 to 6 ounces each) boneless skinless chicken thighs or breasts (cut into bite-sized pieces)

  • 1 recipe or package fajita seasoning mix (taco seasoning may also be used)
  • 1 cup sour cream
  • 4 ounces cream cheese (softened)

Instructions

  2. In a skillet over medium heat, add olive oil and sauté bite-sized chicken pieces until fully cooked. Remove from skillet.
  3. In the same skillet, sauté sliced onions and bell peppers until tender.
  4. Return the chicken to the skillet and mix in fajita seasoning, sour cream, and softened cream cheese until well combined.
  5. Transfer mixture to an oven-safe baking dish, top with cheddar cheese, and bake for 10-15 minutes until cheese is melted.
