  • 1 (15 oz) can chickpeas, drained and rinsed
  • 2 teaspoons olive oil
  • 3/4 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 34 cups chopped romaine lettuce
  • 1/2 cup tahini dressing (dairy-free)
  • 1 ripe avocado, mashed with a fork (optional)
  • 23 large wraps

Instructions

  1. Rinse and drain 1 can of chickpeas, then pat dry.
  2. Heat 2 teaspoons of olive oil in a large skillet over medium heat. Add the chickpeas with 3/4 teaspoon paprika, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and salt to taste. Cook for about 5 minutes until crispy.
  3. In a mixing bowl, combine 3-4 cups chopped romaine lettuce with 1/2 cup tahini dressing, adding optional parmesan cheese and croutons.
  4. Lay out a large wrap and spread mashed avocado at the bottom if using. Top with seasoned chickpeas and salad mixture.
  5. Fold the sides of the wrap inward and roll tightly. Optionally, place the seam side down in a hot pan to seal before slicing in half.
