  • 1 tbsp ground cinnamon
  • 1 ½ cups mashed sweet potato
  • ½ cup almond butter
  • 3 large eggs
  • ¼ cup honey

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8.5-inch loaf pan with parchment paper.
  2. Blend rolled oats in a high-speed blender until they resemble flour (skip if using oat flour).
  3. In a mixing bowl, whisk together oat flour, cinnamon, baking soda, and salt.
  4. In the blender, combine mashed sweet potato, almond butter, honey, eggs, and vanilla; blend until smooth.
  5. Add the wet mixture to the dry ingredients and stir until just combined.
  6. Pour the batter into the prepared loaf pan and sprinkle with a topping of cinnamon and coconut palm sugar.
  7. Bake for about 50 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
