  • 3/4 cup brown sugar (or coconut sugar)
  • 1 1/2 cups overripe bananas, mashed
  • 2 eggs (or egg substitute)
  • 1 tsp vanilla extract
  • 1 3/4 cups gluten-free all-purpose flour (or regular flour)
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 cup sugar for cinnamon swirl
  • 2 tsp cinnamon for cinnamon swirl

Instructions

  1. Preheat the oven to 350°F (175°C). Line a loaf pan with parchment paper.
  2. In a mixing bowl, combine melted butter and brown sugar, then mix until creamy. Add mashed bananas, eggs, and vanilla; blend well.
  3. Stir in gluten-free flour, baking soda, cinnamon, and salt until just combined.
  4. In a separate bowl, mix sugar and cinnamon for the swirl topping.
  5. Pour half of the batter into the prepared pan. Sprinkle most of the cinnamon mixture on top.
  6. Add remaining batter, covering the cinnamon layer; reserve some mixture for topping.
  7. Bake for 55-65 minutes until a toothpick comes out clean. Cool before slicing.
