  • 4 boneless, skinless chicken thighs

  • 2 cloves garlic (minced)
  • 1 tbsp Italian seasoning
  • 1 tsp oregano

  • ½ cup sun-dried tomatoes (drained and thinly sliced)
  • 1 cup chicken stock
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 tbsp cornstarch
  • ¼ cup fresh basil leaves (chopped)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season the chicken thighs with salt and pepper, then brown them for 2-3 minutes on each side. Remove from skillet.
  2. Sauté minced garlic, Italian seasoning, oregano, red pepper flakes, and sun-dried tomatoes in the same skillet for about 2-3 minutes.
  3. Pour in chicken stock and heavy cream; add Parmesan cheese. Whisk in cornstarch until well combined.
  4. Return chicken to the skillet, cover with sauce, reduce heat, and cook for 15-20 minutes until fully cooked.
