  • 4 boneless, skinless chicken thighs
  • ½ cup sun-dried tomatoes
  • 1 cup chicken stock
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic (minced)
  • 1 tbsp Italian seasoning
  • 1 tsp oregano
  • ¼ tsp red pepper flakes
  • 1 tbsp olive oil
  • Salt and black pepper (to taste)
  • 1 tbsp cornstarch
  • ¼ fresh basil leaves (chopped)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season chicken thighs with salt and pepper, then brown for 2–3 minutes on each side. Remove from skillet.
  2. In the same skillet, sauté minced garlic, Italian seasoning, oregano, red pepper flakes, and sun-dried tomatoes for 2–3 minutes until fragrant.
  3. Add chicken stock and heavy cream to the skillet. Whisk in Parmesan cheese and cornstarch until smooth.
  4. Return the chicken to the skillet, cover with sauce, reduce heat, and cook for 15–20 minutes until fully cooked (internal temperature should reach 165°F).
  5. Stir in fresh basil before serving warm with extra Parmesan on top.
