  • 2 lb boneless skinless chicken breasts
  • 1/4 cup all-purpose flour
  • 1/4 cup chopped cilantro
  • 2 tbsp coconut oil
  • 1 tbsp olive oil
  • 1 garlic clove (minced)
  • 1 cup coconut milk
  • 2/3 cup chicken broth
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a large oven-safe skillet over medium heat and add coconut oil and olive oil.
  3. Combine flour and chopped cilantro in a bowl. Coat each chicken breast in the mixture and place them in the skillet.
  4. Sear the chicken for about 3-4 minutes per side until golden brown, adding minced garlic towards the end.
  5. In another bowl, mix together coconut milk, chicken broth, brown sugar, and juice from one lime.
  6. Pour the sauce over the seared chicken, then transfer to the oven to bake for 10-15 minutes until cooked through (165°F internal temperature).
  7. Remove from the oven, drizzle with remaining lime juice, season with salt and pepper, garnish with additional cilantro before serving.
