  • 2 lb boneless skinless chicken breasts
  • 1/4 cup all-purpose flour
  • 1/4 cup chopped cilantro
  • 1 cup coconut milk
  • 2/3 cup chicken broth
  • Juice of 2 limes
  • 2 tbsp coconut oil
  • 1 tbsp olive oil
  • Minced garlic

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix flour and chopped cilantro. Coat each chicken breast with this mixture.
  3. Heat coconut oil and olive oil in a large oven-safe skillet over medium heat. Sear the chicken for 3–4 minutes on each side until browned. Add minced garlic for the last 30 seconds.
  4. In another bowl, combine coconut milk, chicken broth, brown sugar, and juice from one lime. Pour this mixture over the seared chicken.
  5. Bake in the preheated oven for 10–15 minutes until the internal temperature reaches 165°F (74°C). Drizzle with additional lime juice before serving.
