  • 3 cups cooked rice (white or brown)
  • 1 cucumber (diced)
  • 1 large avocado (diced)
  • ¼ cup cilantro (chopped)
  • ¼ cup soy sauce
  • ¼ cup sugar
  • 3 tbsp vinegar
  • ¼ cup mayo
  • 1 tbsp Sriracha
  • 1 cup panko breadcrumbs
  • ¼ cup olive oil

Instructions

  1. Prepare the rice according to package instructions using a rice cooker or stovetop method. Allow it to cool.
  2. In a mixing bowl, whisk together soy sauce, sugar, vinegar, mayo, and Sriracha until smooth.
