  • 1 teaspoon xanthan gum (if not included in flour)
  • 1 packet rapid rise/instant yeast (2 1/4 teaspoons)
  • 1/4 cup extra virgin olive oil
  • 1/4 cup honey (or agave/maple syrup)
  • 3 egg whites
  • 1 1/2 cups warm water (100-110°F)

Instructions

  1. Preheat the oven to 350°F and grease a 9-inch x 5-inch bread pan.
  2. In a bowl, mix gluten-free flour, baking powder, and yeast.
  3. Combine wet ingredients: olive oil, honey, vinegar, and warm water; blend with dry ingredients until smooth.
  4. Add egg whites and salt; mix until thick like cake batter.
  5. Pour into the greased pan, cover with plastic wrap and a towel, and let rise in a warm spot for about 30 minutes.
  6. Bake for around 30 minutes until golden brown on top.
