  • ½ cup cane sugar
  • 6 tablespoons unsalted butter (frozen)

  • 1 teaspoon pure vanilla extract
  • Filling: ½ cup cane sugar
  • 2 teaspoons ground cinnamon
  • 3 tablespoons unsalted butter (melted)

Instructions

  1. Activate the yeast by combining it with warm milk and cane sugar; let sit until frothy.
  2. In another bowl, mix the gluten free flour blend, sugar, and salt.
  3. Combine the yeast mixture with dry ingredients, then add melted butter and vanilla; mix until a soft dough forms.
  4. Chill the dough in plastic wrap for about an hour.
  5. Roll out chilled dough into a rectangle about ¼ inch thick.
  6. Spread melted butter over the dough and sprinkle with cinnamon-sugar mixture.
  7. Roll tightly into a log and cut into pieces; place in greased muffin tins with cut side up.
  8. Bake at 375°F (190°C) for about 25 minutes until golden brown.
