  • ½ cup unsalted butter (1 stick), at room temperature
  • 1¼ cups granulated sugar (divided)
  • 2 tbsp lemon zest (grated)
  • 3 large eggs (at room temperature)
  • 1½ cups gluten-free all-purpose flour
  • ½ cup freshly squeezed lemon juice
  • ⅛ tsp kosher salt
  • Powdered sugar for garnish

Instructions

  1. Preheat oven to 350°F. Grease an 8×8-inch baking dish and line with parchment paper.
  2. For the crust, beat together butter, ¼ cup sugar, 1 tbsp lemon zest, and vanilla until fluffy. Mix in flour and salt until combined. Press into the baking dish and bake for 20 minutes.
  3. In another bowl, beat together eggs, remaining sugar, lemon juice, remaining zest, flour, and salt until smooth. Pour over the baked crust.
