- ½ cup unsalted butter (1 stick)
- 1 cup granulated sugar
- 2 tbsp lemon zest
- ½ cup lemon juice (freshly squeezed)
- 1½ cups gluten-free all-purpose flour
- 3 large eggs
- Kosher salt
Instructions
- Preheat your oven to 350°F. Grease an 8×8-inch baking dish and line it with parchment paper.
- For the crust: In a bowl, mix softened butter, sugar, lemon zest, and vanilla until fluffy. Add gluten-free flour and salt; combine well. Press the mixture into the baking dish and poke holes in it.
