Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking dish by greasing it and lining it with parchment paper.
- In a large mixing bowl, beat together softened unsalted butter, granulated sugar, lemon zest, and vanilla extract until fluffy. Add gluten-free flour and salt; mix until uniform.
- Press the dough into the bottom of the prepared baking dish, poke holes with a fork, and bake for 20 minutes until golden brown.
- While the crust cools, whisk together eggs, granulated sugar, lemon juice, lemon zest, gluten-free flour, and salt in another bowl until smooth.
- Pour the filling over the cooled crust and bake for an additional 20-30 minutes until set.
- Allow to cool completely before dusting with powdered sugar and slicing into bars.
