  • ¼ cup granulated sugar
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 1 cup gluten-free all-purpose flour
  • ⅛ tsp kosher salt
  • 3 eggs
  • 1 cup granulated sugar
  • ½ cup lemon juice
  • 1 tbsp lemon zest
  • ½ cup gluten-free all-purpose flour
  • ⅛ tsp kosher salt
  • Powdered sugar (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking dish by greasing it and lining it with parchment paper.
  2. In a large mixing bowl, beat together softened unsalted butter, granulated sugar, lemon zest, and vanilla extract until fluffy. Add gluten-free flour and salt; mix until uniform.
  3. Press the dough into the bottom of the prepared baking dish, poke holes with a fork, and bake for 20 minutes until golden brown.
  4. While the crust cools, whisk together eggs, granulated sugar, lemon juice, lemon zest, gluten-free flour, and salt in another bowl until smooth.
  5. Pour the filling over the cooled crust and bake for an additional 20-30 minutes until set.
  6. Allow to cool completely before dusting with powdered sugar and slicing into bars.
