  • 1 tbsp lemon zest (grated on a Microplane)
  • 1 tsp vanilla extract
  • 1 cup gluten-free all-purpose flour
  • ⅛ tsp kosher salt
  • 3 eggs (at room temperature)
  • 1 cup granulated sugar
  • ½ cup lemon juice (freshly squeezed)
  • 1 tbsp lemon zest (grated on a Microplane)
  • ½ cup gluten-free all-purpose flour
  • ⅛ tsp kosher salt
  • Powdered sugar for garnish

Instructions

  1. Preheat your oven to 350°F and prepare an 8×8-inch baking dish with parchment paper.
  2. Make the crust by mixing softened butter, granulated sugar, lemon zest, and vanilla until fluffy. Add gluten-free flour and salt; combine well.
  3. Press the dough into the dish and bake for about 20 minutes until golden.
  4. Prepare the filling by whisking eggs, granulated sugar, lemon juice, lemon zest, gluten-free flour, and salt until smooth.
  5. Pour the filling over the cooled crust and bake for another 20-30 minutes until set.
  6. Allow to cool before dusting with powdered sugar and slicing into bars.
