- 3 eggs (at room temperature)

- ½ cup lemon juice (freshly squeezed)
- 1 tbsp lemon zest (grated on a Microplane)

- Powdered sugar for garnish
Instructions
- Preheat your oven to 350°F and prepare an 8×8-inch baking dish with parchment paper.
- Make the crust by mixing softened butter, granulated sugar, lemon zest, and vanilla until fluffy. Add gluten-free flour and salt; combine well.
- Press the dough into the dish and bake for about 20 minutes until golden.
- Prepare the filling by whisking eggs, granulated sugar, lemon juice, lemon zest, gluten-free flour, and salt until smooth.
