  • ¾ cup milk or dairy-free milk
  • 1 package active dry yeast
  • 2 ½ cups gluten-free all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • 1 ¼ teaspoons kosher salt
  • 56 tablespoons olive oil
  • Fresh rosemary

Instructions

  1. Heat water and milk until lukewarm (about 110ºF). Add yeast and let sit for 5 minutes.
  2. In a stand mixer, combine flour, sugar, baking powder, and salt. Add the yeast mixture and olive oil; mix on low then medium-high until thick and pourable (about 7 minutes).
  3. Grease a cast iron skillet or cake pan with olive oil. Spread the batter evenly.
  4. Drizzle more olive oil on top, create indentations with fingers, sprinkle with salt and rosemary, then let rise for 30 minutes.
