- ¾ cup milk or dairy-free milk
- 1 package active dry yeast
- 2 ½ cups gluten-free all-purpose flour
- 1 tablespoon granulated sugar
- 1 teaspoon baking powder
- 1 ¼ teaspoons kosher salt
- 5–6 tablespoons olive oil
- Fresh rosemary
Instructions
- Heat water and milk until lukewarm (about 110ºF). Add yeast and let sit for 5 minutes.
- In a stand mixer, combine flour, sugar, baking powder, and salt. Add the yeast mixture and olive oil; mix on low then medium-high until thick and pourable (about 7 minutes).
- Grease a cast iron skillet or cake pan with olive oil. Spread the batter evenly.
- Drizzle more olive oil on top, create indentations with fingers, sprinkle with salt and rosemary, then let rise for 30 minutes.
