  • 2 tbsp vegetable oil
  • 3 cloves garlic (minced)
  • 1/4 cup diced onion
  • 1 large carrot (34 oz)
  • 2 tbsp tomato paste
  • 1 1/4 cups lentils (green, red split, or black)
  • 12 oz potatoes (cut into bite-sized pieces)
  • 2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp thyme
  • 1/2 tsp oregano
  • 45 cups water

Instructions

  1. In a large pot or Dutch oven, heat vegetable oil over medium heat. Add diced onion and sauté for one minute. Then add minced garlic and sliced carrot; cook for an additional 2-3 minutes.
  2. Stir in tomato paste and lentils; cook for one minute before adding chopped potatoes.
  3. Pour in 4 cups of water and season with salt, black pepper, thyme, and oregano. Bring to a boil, then reduce the heat to medium-low and simmer for 25-35 minutes until lentils are cooked through and potatoes are tender.
