- 2 tbsp vegetable oil
- 3 cloves garlic (minced)
- 1/4 cup diced onion
- 1 large carrot (3 – 4 oz)
- 2 tbsp tomato paste
- 1 1/4 cups lentils (green, red split, or black)
- 12 oz potatoes (cut into bite-sized pieces)
- 2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp thyme
- 1/2 tsp oregano
- 4–5 cups water
Instructions
- In a large pot or Dutch oven, heat vegetable oil over medium heat. Add diced onion and sauté for one minute. Then add minced garlic and sliced carrot; cook for an additional 2-3 minutes.
- Stir in tomato paste and lentils; cook for one minute before adding chopped potatoes.
- Pour in 4 cups of water and season with salt, black pepper, thyme, and oregano. Bring to a boil, then reduce the heat to medium-low and simmer for 25-35 minutes until lentils are cooked through and potatoes are tender.
- Taste and adjust seasoning as needed before serving warm.
