- 1/4 cup sour cream
- 1/2 cup cotija cheese, crumbled (plus extra for garnish)
- 1/4 cup fresh cilantro, chopped (plus extra for garnish)
- 1 green onion, sliced
- 1 tbsp lime juice
- 1 tsp chili powder
- Salt and pepper, to taste
Instructions
- Cook the rotini pasta in salted boiling water according to package instructions. Drain and cool under cold water.
- Grill fresh corn until lightly charred; let cool before cutting the kernels off the cob. If using frozen corn, thaw and drain well.
- In a large bowl, mix mayonnaise, sour cream, lime juice, chili powder, salt, and pepper until smooth.
- Combine the cooked pasta, grilled corn, cotija cheese, cilantro, and green onion into the dressing mixture. Toss gently until evenly coated.
- Taste for seasoning adjustments and chill for at least 30 minutes before serving.
