- 8 large eggs
- 1/4 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 6 English muffins
- 6 slices of American cheese
- 6 slices of Canadian turkey bacon (or sliced chicken ham)
Instructions
- Preheat your oven to 350°F. Line a large sheet pan with parchment paper and lightly coat it with cooking spray.
- In a mixing bowl, whisk together eggs, milk, salt, and black pepper until well combined.
- Pour the egg mixture onto the prepared sheet pan and bake for 15-20 minutes until set and golden on top.
- Allow the baked egg mixture to cool slightly before cutting into squares.
- Assemble each sandwich by placing an egg square on the bottom half of an English muffin, topping it with cheese and turkey bacon.
- Wrap each sandwich in parchment paper or foil for freezing or serve immediately.
