  • 6 medium chicken thighs (skin-on, bone-in)
  • 2 tablespoons butter
  • 1 large onion (thinly sliced)
  • ½ cup dry white apple vinegar or chicken broth
  • 1 teaspoon fresh thyme leaves
  • 8 ounces Gruyere cheese (shredded)
  • Salt and pepper

Instructions

  1. Pat chicken thighs dry and season with salt, pepper, and onion powder.
  2. Heat butter in a large oven-proof skillet over medium heat. Sear the chicken thighs skin-side down for about 4-5 minutes until golden brown. Flip and cook for an additional 4 minutes.
  3. Remove chicken from the skillet and add sliced onions with a pinch of salt and pepper. Reduce heat to medium-low and caramelize onions for about 20 minutes, stirring frequently until golden.
  4. Preheat the oven to 375°F. In the last 10 minutes of cooking onions, stir in fresh thyme and pour in vinegar or broth, simmering for about 2 minutes until reduced by half.
  5. Nestle seared chicken back into the skillet with onions, sprinkle with Gruyere cheese, and bake for approximately 20 minutes until cheese is melted and bubbly.
