  • 2 medium spaghetti squash
  • 1 pound boneless, skinless chicken breasts
  • 8 ounces fresh spinach
  • 4 ounces cream cheese
  • 1 cup Greek yogurt
  • 1 cup grated parmesan cheese
  • 6 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 3 tablespoons butter
  • 1 small onion, finely diced
  • 1 cup chicken broth
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup chopped fresh parsley, divided

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut spaghetti squash in half lengthwise, remove seeds, and brush cut sides with olive oil. Season with salt, pepper, and garlic powder.
  3. Place squash cut-side down on a baking sheet and bake for 30-35 minutes until tender.
  4. In a skillet, cook cubed chicken in butter until golden brown; set aside.
  5. Sauté diced onion in remaining butter, add minced garlic, then stir in spinach until wilted.
  6. Pour in chicken broth, mix in cream cheese, Greek yogurt, parmesan cheese, thyme, and chicken.
  7. Scrape out strands from baked squash and mix some with the filling; fill squash halves with the mixture.
  8. Top with extra parmesan cheese and return to the oven for an additional 10-15 minutes until melted.
