  • 2 medium spaghetti squash
  • 1 pound boneless, skinless chicken breasts
  • 8 ounces fresh spinach
  • 6 cloves garlic
  • 4 ounces cream cheese
  • 1 cup plain Greek yogurt
  • 1 cup freshly grated parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C). Cut spaghetti squash in half lengthwise, scoop out seeds, brush with olive oil, season, and place cut-side down on a baking sheet. Bake for 30-35 minutes until tender.
  2. While the squash bakes, sauté cubed chicken in butter until golden brown. Remove from skillet.
  3. In the same skillet, cook diced onion and garlic until fragrant. Add spinach; cook until wilted.
  4. Pour in chicken broth and stir in cream cheese, Greek yogurt, parmesan, thyme, and cooked chicken. Simmer for 2-3 minutes.
  5. Scrape spaghetti-like flesh from baked squash halves and mix with the creamy filling. Fill each half with the mixture and top with extra parmesan.
  6. Return stuffed squashes to the oven for an additional 10-15 minutes until cheese is melted.
