  • 1 1/2 cup gluten free flour blend
  • 3/4 teaspoon xanthan gum (only add if your GF flour blend doesn't already contain xanthan)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons light brown sugar
  • 2/3 cup milk, dairy or non dairy
  • 1 tablespoon oil
  • 2 eggs or 6 tablespoons aquafaba
  • 2 teaspoons vanilla extract
  • 2 apples, peeled and finely diced
  • 3 cups powdered/icing sugar
  • 3 tablespoons milk, dairy or non dairy
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, whisk together the dry ingredients: gluten free flour, xanthan gum, baking powder, salt, cinnamon, nutmeg, and sugar.
  2. Add the wet ingredients: milk, oil, eggs (or aquafaba), and vanilla extract. Mix until smooth.
  3. Carefully fold in the diced apples until evenly distributed.
  4. Heat oil in a skillet to 360–375°F (80–90°C).
  5. Scoop 1–2 tablespoons of batter into hot oil and fry for 3 minutes on one side before flipping and cooking for an additional 2–3 minutes until golden brown.
  6. Allow fritters to cool on a wire rack before glazing.
