  • 1 Tbsp cider vinegar
  • 2 Tbsp instant coffee granules
  • 1 cup boiling water
  • 1/2 cup avocado oil
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1 3/4 cups gluten-free all-purpose flour
  • 3/4 cup raw cacao powder
  • 1 1/3 cups coconut sugar
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 1/2 tsp sea salt
  • Optional: 1 1/2 cups chocolate chips
  • Toppings: 8 ounces dark chocolate, 2 Tbsp pure maple syrup, 1 pinch sea salt

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare your cake pans.
  2. In a mixing bowl, combine coconut milk and cider vinegar; let sit for 5 minutes. Stir in coffee granules and boiling water.
