  • 1/2 cup salted butter
  • 2/3 cup applesauce
  • 2 eggs
  • 1 cup white sugar
  • 2 tsp vanilla extract
  • 1 cup almond flour
  • 1 1/4 cup oat flour
  • 2 tsp baking powder
  • 2 tbsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter, applesauce, eggs, sugar, and vanilla until smooth.
  3. Gradually add almond flour, oat flour, baking powder, and salt; mix until well combined.
  4. In another bowl, prepare the cinnamon sugar filling by mixing melted butter with oat flour, white sugar, and cinnamon.
  5. For the streusel topping, combine brown sugar, almond flour, oat flour, and cinnamon with room temperature butter until crumbly.
  6. Grease an 8×8 baking dish and layer half of the cake batter followed by half of the cinnamon filling; repeat layering.
  7. Top with streusel and bake for about 43 minutes (25 minutes first layer + additional 18 minutes).
  8. Allow to cool completely on a wire rack before slicing.
