  • 1/2 cup salted butter (softened)
  • 2/3 cup applesauce
  • 2 eggs
  • 1 cup white sugar
  • 2 tsp vanilla extract
  • 1 cup almond flour
  • 1 1/4 cup oat flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp salted butter (melted)
  • 1 tbsp oat flour
  • 2 tbsp white sugar
  • 1/2 tbsp cinnamon
  • 1/4 cup salted butter (slightly softened)
  • 1/4 cup light brown sugar
  • 1/4 cup almond flour
  • 1/2 cup oat flour
  • 2 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine softened butter, applesauce, eggs, white sugar, and vanilla extract. Mix until smooth.
  3. Add almond flour, oat flour, baking powder, and salt; mix until well combined.
  4. In another bowl, whisk together melted butter, oat flour, white sugar, and cinnamon for the filling.
  5. For the streusel topping, combine brown sugar, almond flour, oat flour, and cinnamon with room temperature butter until crumbly.
  6. Grease an 8×8 inch baking dish. Pour half of the batter into the dish and spread evenly.
  7. Sprinkle half of the cinnamon filling over the batter and gently swirl it in.
  8. Add remaining batter on top and repeat with remaining filling before swirling once more.
  9. Bake for 25 minutes; then add streusel topping and bake for an additional 18 minutes.
  10. Allow to cool completely before slicing into squares.
