  • 2 tbsp sugar
  • 1/2 cup cashew milk (or other non-dairy milk)
  • 2 tbsp coconut oil
  • 2 cups Bob's Red Mill gluten free 1-to-1 flour
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup cornstarch

Instructions

  1. Heat cashew milk and coconut oil in the microwave for 1 minute.
  2. In a mixing bowl, combine yeast and sugar; add the heated milk mixture and let it proof for 3 minutes.
  3. Mix gluten-free flour and salt in a separate bowl.
  4. Add eggs to the yeast mixture and whisk; gradually mix in the flour until combined into a sticky dough.
  5. Dust your surface with cornstarch, roll out the dough to about 1/2 inch thick, then cut into long strips and twist into shapes.
  6. Allow doughnuts to rise covered in a warm area for 1 hour.
  7. Heat oil to 350°F (175°C) and fry the doughnuts until golden brown on both sides.
  8. Coat in cinnamon sugar once cooled slightly.
