  • 1 jar (24 oz) marinara sauce
  • 1 can (14.5 oz) diced tomatoes (liquid included)
  • 4 cups low sodium chicken broth
  • 1 tbsp Italian seasoning
  • 1/4 tsp sea salt (adjust)
  • 1/4 tsp ground black pepper
  • 1/4 tsp red pepper flakes (optional for spicy)
  • 2 cups spinach (optional)
  • 1 box (10 oz) gluten free lasagna noodles (broken in half)

Instructions

  1. Heat olive oil in a large stock pot over medium heat. Sauté chopped onion and minced garlic until fragrant and translucent.
  2. Add ground beef; cook until browned. Drain excess fat.
  3. Stir in marinara sauce, diced tomatoes (with liquid), chicken broth, Italian seasoning, salt, and pepper. Bring to a boil.
  4. Add broken gluten free lasagna noodles; simmer for about 15 minutes until cooked through, stirring occasionally.
  5. Stir in spinach until wilted. Adjust spices if needed before serving hot.
