  • 3/4 cup white rice flour
  • 1 cup potato starch
  • 1 cup tapioca flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/4 cup olive oil (or softened butter)
  • Kosher salt for topping

Instructions

  1. Activate the yeast by combining it with lukewarm water and honey; let sit for about 5 minutes until bubbly.
  2. In a stand mixer, mix the dry ingredients. Once yeast is bubbly, combine it with dry ingredients along with olive oil.
  3. Mix until the dough pulls away from the sides, then let it rise in a greased bowl for about an hour.
  4. Preheat your oven to 450°F and bring water mixed with baking soda to a boil.
  5. Shape the dough into bite-sized pieces and gently boil each batch for about 1–1.5 minutes.
  6. Brush the boiled bites with dairy-free butter or olive oil, sprinkle with kosher salt, and bake for approximately 15 minutes until golden brown.
