  • 1 tablespoon honey (or sugar)
  • 3/4 cup brown rice flour
  • 3/4 cup white rice flour
  • 1 cup potato starch
  • 1 cup tapioca flour
  • 1 teaspoon xanthan gum
  • 1 teaspoon baking powder (gluten-free)
  • 1 teaspoon salt
  • 1/4 cup olive oil (or softened butter)
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon psyllium husk (whole or 1 egg for non-vegan)
  • 6 cups water
  • 1/2 cup baking soda
  • margarine (dairy free)
  • Kosher Salt
  • Honey (optional)

Instructions

  1. Activate the yeast by mixing it with lukewarm water and honey; let it sit until bubbly.
  2. In a separate bowl, combine all dry ingredients: both rice flours, potato starch, tapioca flour, xanthan gum, baking powder, and salt.
  3. Combine the wet ingredients (yeast mixture, olive oil) into the dry mix; stir until well combined.
  4. Let the dough rise in a greased bowl for about an hour until doubled.
  5. Preheat your oven to 450°F and boil water mixed with baking soda in a large pot.
  6. Shape the dough into bite-sized pieces and drop them into boiling water for about 1–1.5 minutes.
  7. Place boiled bites on a parchment-lined baking sheet, brush with olive oil or dairy-free butter, sprinkle salt on top, and bake for approximately 15 minutes until golden.
