  • 7 oz vegan sour cream
  • 7 oz vegan cream cheese
  • 6 oz vegan chicken cubes
  • 3 cups vegetable broth
  • 2 Tbsp olive oil
  • 3 cloves garlic (diced)
  • 1/3 cup onions (finely chopped)
  • 2 ribs celery (chopped)
  • 1/4 cup carrots (shredded)
  • 1 handful spinach
  • Italian herbs, salt, and pepper to taste

Instructions

  1. In a saucepan over medium heat, warm the olive oil. Add garlic, diced celery, and onions; sauté for about 2 minutes until softened. Stir in the vegan chicken cubes and season with salt and pepper; cook for another 3 minutes.
  2. Pour in the vegetable broth and bring to a boil. Once boiling, add the gnocchi and cook for about 2-3 minutes until they float.
  3. Stir in the vegan cream cheese and sour cream until combined. Add shredded carrots, Italian herbs, and spinach; cook for an additional 2 minutes until heated through.
