  • 2 tbsp butter
  • 3/4 cup chopped onion
  • 3/4 cup chopped celery
  • 2 cups cauliflower rice
  • 1 cup shredded Monterrey Jack cheese
  • 1 cup shredded sharp cheddar cheese
  • 4 oz canned green chiles (drained)
  • 1/2 cup sour cream (full fat)
  • 1/2 cup heavy cream
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp granulated garlic

Instructions

  1. Preheat oven to 325°F and grease an 8×8 inch baking pan.
  2. Sauté chopped onions and celery in melted butter until tender (5-7 minutes). Add heavy cream and reduce heat until thickened.
  3. In a large bowl, mix cauliflower rice, half of each cheese, green chiles, sour cream, sautéed vegetables, salt, pepper, and garlic until well combined.
  4. Transfer mixture to the baking pan and top with remaining cheese. Bake for 20-25 minutes or until bubbly and golden.
