  • 2 tbsp butter
  • 3/4 cup chopped onion
  • 3/4 cup chopped celery
  • 2 cups cauliflower rice
  • 1 cup shredded Monterrey Jack cheese
  • 1 cup shredded sharp cheddar cheese
  • 4 oz canned green chiles (drained)
  • 1/2 cup sour cream (full fat)
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (163°C) and grease an 8×8 baking pan.
  2. In a medium sauté pan, melt butter over medium-high heat. Add onions and celery; sauté until tender (5-7 minutes).
  3. Stir in heavy cream and cook until thickened by half, then remove from heat.
  4. In a large mixing bowl, combine cauliflower rice, half of each cheese variety, green chiles, sour cream, the sautéed mixture, salt, and pepper.
  5. Transfer the mixture to the prepared baking pan and top with remaining cheese.
  6. Bake for 20-25 minutes or until bubbly and golden brown.
