- 2 tbsp butter
- 3/4 cup chopped onion
- 3/4 cup chopped celery
- 2 cups cauliflower rice
- 1 cup shredded Monterrey Jack cheese
- 1 cup shredded sharp cheddar cheese
- 4 oz canned green chiles (drained)
- 1/2 cup sour cream (full fat)
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- Preheat your oven to 325°F (163°C) and grease an 8×8 baking pan.
- In a medium sauté pan, melt butter over medium-high heat. Add onions and celery; sauté until tender (5-7 minutes).
- Stir in heavy cream and cook until thickened by half, then remove from heat.
- In a large mixing bowl, combine cauliflower rice, half of each cheese variety, green chiles, sour cream, the sautéed mixture, salt, and pepper.
- Transfer the mixture to the prepared baking pan and top with remaining cheese.
- Bake for 20-25 minutes or until bubbly and golden brown.
